Hojicha the Roasted Tea

Hojicha tea is considered a low grade Japanese green tea roasted to various degrees using various methods like clay pot or over charcoal.

One story about this tea is that tea makers were looking for a way to boost sales and so they roasted the low grade tea that did not otherwise sale. The unique roasting process changes the flavor of green tea completely. The high firing temperature removes most of the caffeine making this a great after dinner tea or even children.

The reddish liquor has a prominent smoky flavor like fire roasted corn including the sweetness with very low astringency.
